June, our instructor, taught us about "fining". This is a process where you add beaten egg whites to a mixture and it acts like a sponge to clarify the liquid. You can do this to chicken broth and it changes into a clear consomme. You can also do this to wine and it absorbs the
sediments in wine and makes it clear. It is kind of cool to observe.
June calls this a method where a mere mortal can take an ugly stepsister and then make something into a Cinderella. I kind of like that analogy. It gives me hope.
